In today's cooking I have taken a vegetable which is known as potol / parwal / pointed gourd which is found mostly in India. Vegetable are always good for health. So making a vegan preparation at home would be nice. If the recipe is new but very easy to make with the details given then there is always room for trying new things.
I am sure if someone open to new menu for meal would welcome this item made of pointed gourd / potol / parwal, onion and posto(white poppy seeds).

Ingredients:
- Potol / Parwal - 500 grams
- Onion - 2 big sized
- Tomato - 2 medium sized
- Posto / White Poppy Seeds - 50 grams
- Turmeric powder - 1 and 1/2 teaspoon
- Green chili - 7/8 pieces
- Chili powder - 1/2 teaspoon
- Salt to taste
- Cooking oil
How to make:
- Peel the pointed gourd / potol / and cut little into both the sides. Mix it with little salt and turmeric powder and keep it aside.
Potol mixed with salt and turmeric powder - Cut Onion and Tomato and keep aside.
Cut Onion
Cut tomato - Grind poppy seeds and green chili and keep it ready.
Posto grinded - Now after all the ingredients are ready, put a pan on fire and heat it.
- Once the pan is heated, pour 2 tablespoon oil and heat it.
- Fry Pointed gourd / potol / parwal for 2 minutes in oil then keep it aside.
Fried pointed gourd - Heat 3 tablespoon oil and fry Onion in medium flame till it is brown in color.
- Add tomato and cook for 2 minutes.
Frying onion and tomatoes - Then add salt to taste, turmeric powder, and chili powder, also if you want then add little sugar to have a flavor.
- Cook for few minutes till the spices are cooked and add grinded poppy seeds and green chili.
- Cook for few minutes, and then add pointed gourd / potol into it.
- Mix it with spices nicely; add little water into it so the taste of spices mixes with all potol in the pan.
- Let it cook for few minutes
- Once you feel that the spices are properly entered into pointed gourd potol, put off the fire.
- Your "Potol Peyaj Posto" is ready to serve with rice, roti or chapati.
Different name of pointed gourd in India:
- In Bengal, Assam and Odisha; it is called potol or patal.
- Hindi it's said "parwal"
- In Gujrati and Marathi it's called "parval"
- Telugu it's called kommu potla/ chedu potla
- Tamil name is kambupudalai
- In Kannada it's called kaadu padaval, kadu padavala kayi.
- Malayalam it's said "patolam".
- Scientific name of this pointed gourd is "trisanthes dioica".
Nutrients Value
Potol has got some nutrients value. It is rich in vitamins and minerals. It is also good for gastric problem. Fruits roots and leaves of this plant is used to make ayurvedic medicine.
